It’s been a week now since we all rang in the new year, but the aftermath of holiday excess is still lingering. While I love food way too much to diet, there are lighter (ie: nothing fried, no red meat) meal options I”ve come across that are surprisingly delicious, sneak in a full serving of vegetables and leave you wanting seconds without feeling weighed down. I typically make this Orzo with Roasted Vegetables in the summer, as this is a dish served cold. However, this refreshing dish has been just what I’ve been craving lately to get me out of my heavy food coma.
